Dragon Tongue Beans are a stunning Dutch heirloom bean prized for their creamy yellow pods streaked with beautiful purple markings. Tender, crisp, and nearly stringless when young, they have a rich, buttery flavor with a hint of nuttiness that makes them delicious both raw and cooked. As they cook, the purple streaks fade, revealing a beautiful golden bean.

These versatile beans are excellent steamed, sautéed, roasted, grilled, or added to stir-fries and salads. They also make exceptional pickled beans and can be allowed to mature for shelling beans later in the season.
