ESSENTIAL VINAIGRETTE

This basic vinaigrette is a must have in any cook’s repertoire, and this is Michele’s go-to.  It’s simple, yet versatile because you can switch up the vinegar, or the add-ins.  With so few ingredients, the quality of your ingredients really shines through, so choose high quality olive oil and vinegar.

You can use this dressing for salads of any kind, a dip for crudité, or drizzle it on roasted vegetables.  The options are endless.

Ingredients

·       ¼ cup of your favorite vinegar; white wine, champagne or apple cider vinegar

·       1 Tablespoon Dijon mustard

·       1 teaspoon honey

·       1 shallot or 1 garlic clove, finely chopped (if desired)

·       ½ cup High Quality Extra Virgin Olive Oil

·       ¾ teaspoon kosher salt

·       Pepper to taste

·       Small lidded jar for shaking up the vinaigrette

 

Method

1)      Combine the vinegar, Dijon, honey, shallot or garlic, oil, salt and pepper in a small lidded jar and shake until emulsified.  Store in the refrigerator for up to 2 weeks.  Shake well before using.
